Bearhands cooks a mean steak.

Sometimes I help him by sous vide’ing the meat first, but most times he just oils and seasons the steaks, allows them to sit for a bit, then heads out to the BBQ to work his magic.

That said, sometimes even a Bearhands steak needs a little crowing glory…..

Yield 1 cup

The only thing that tops a well-cooked steak is a delicious blue cheese sauce! What I love about this decadent sauce is that it's super easy to make. Perfect for entertaining.

Ingredients

15g butter

1 tsp flour

1/3 brown onion

200ml cream

75g blue cheese

salt and pepper to taste

Instructions

Melt the butter in a small saucepan over low heat. Add the onion and gently sauté.

Add the flour and mix to a paste. Gently cook the roux for one minute, stirring constantly. Don't skip this step - if you do, your sauce will taste floury.

Remove the saucepan from the heat and whisk in the cream. Return to medium heat and simmer, stirring, until the sauce starts to thicken.

Crumble the blue cheese into the pan, and stir until well combined.

Serve atop perfectly cooked steaks.

This sauce is a great way to use any blue cheese that didn’t get finished on a cheese platter – just wrap it and freeze it for another day.
