    Adventures of the Broccoli Whisperer Episode 1: cream of broccoli soup

    Sunday started as an average day for Amanda, the alter ego of superhero The Broccoli Whisperer.

    She woke with a hangover.  At an early Mothers Day lunch, she enjoyed a few glasses of hair of the dog and regaled her husband's family with hilarious anecdotes.  Then amused her husband with witty banter all the way home from Brisbane.

    The football finished and darkness descended over the farm.

    Just then... a cry!

    Mummy, we're hungry

    Amanda flew into action, put her apron on backwards donned her cape and set about becoming The Broccoli Whisperer.broccoli whisperer social media

    Crash went the pot, splash went the soup, sauté went the onions.  The battle was on.

    cream of broccoli soup

    ingredients:

    • olive oil
    • 1 large onion, chopped
    • 2 cloves garlic, chopped
    • 1 large potato, cut into cubes
    • 1kg broccoli, cut into small florets
    • 1L chicken stock
    • 250ml water
    • 150ml cream
    • Salt and pepper, to season

    method:

    Heat oil in a heavy-based saucepan, add garlic and onions and cook over a low heat until the onions are translucent.

    Add potato, chicken stock and water and bring to the boil.  Add broccoli and simmer until tender (about 15 minutes).  Cool slightly, then use a stick blender to puree until smooth.  Stir in cream and season to taste.cream of broccoli soup

    Our hero presented the bowls of broccoli soup to her daughters and braced herself for their complaints.  Would it be too green? too hot? too soupy?

    They lifted spoons to their mouths, the excited spectators held their breath...

    when suddenly

    shazam

    The Broccoli Whisperer took off her apron (seriously it looks just like a cape when you wear it backwards). She celebrated another victory for broccoli, fist-punched mothers everywhere and wandered off to find another glass of wine.

      You are so clever! I love the sound of this, not sure the kids would because - you know - they are pains in the butt. I'm usually the baked beans whisperer after a big night out - with sausages if they're lucky! x
