Yield 20 cookies
This cookie recipe is the only one you'll ever need. With so many awesome variations, it's the biscuit to build on!
1/2 cup caster sugar
1 tsp vanilla extract
1 3/4 cups self raising flour
Cream together the butter and sugar. Add the egg and the vanilla, beat well.
Gradually add the flour and mix into a stiff paste.
Roll into balls and place on lined trays. Bake at 180C until golden.
Before baking make a hollow in each biscuit ball and fill each hollow with a little bit of your favourite jam. Bake until golden.
Add 1/2 cup brown sugar during the creaming and 1/2 cup of cocoa with the flour.
Push smarties into the top of your biscuits for colourful lunch box treats.
For coconut cookies add 2 tablespoons of desiccated coconut to the mixture.
Choc Chip Cookies
For chocolate chip cookies add 100g of chocolate chips (or pieces of a chocolate bar) to the mix.
To make cornflake cookies add a 1/2 cup of sultanas (or any dried fruit) and 3/4 cup of crushed cornflakes to the mix.
