And so commences week two of my attempt to clean up my act (food wise) and mitigate the muffin top.  There were a few transgressions on the weekend but, all in all, I’m sticking to the plan.

This morning I climbed Mt Coolum with my mate Susan.  It’s true that I neglected to tell her that I would be photographing meatballs when we got the top.  In hindsight, I shouldn’t have worried – she stood proudly by while I made a rock picnic and then lay on the ground to photograph it.  That’s why we’re friends!

Mt Coolum is an ancient 208m high volcanic dome.  It’s also a very picturesque spot to photograph your meatballs – especially when you’re a whacko with a willing accomplice.

(aka thai turkey meatballs)

These meatballs are my friend when I’m trying to shed the k-gees.  I make a batch and keep them in the fridge.  They’re flavoursome and guilt free.  Exactly what I need when I find myself staring into the open fridge for the third time in an hour, just checking if anything has miraculously changed since the last time I looked.  🙂  This recipe makes about two dozen.

Ingredients

500g turkey mince
2 tbsp Thai green curry paste
1 egg
1 tbsp besan flour (also called chickpea flour, garbanzo flour, gram flour, and channa flour)
oil for frying

Method

In a large bowl, combine mince and curry paste.

Add egg and mix thoroughly.

Finally add the flour and mix until evenly distributed.

Using wet hands, roll tablespoon-sized meatballs and cook in a frypan over a medium heat.

Keep them in the fridge and use them as a talisman against three-thirty-itis.

      There were some people at the top who joked about the “Today” show taking photos of food on rocks. Lucky for me, Susan was steadfast!

      P.S. There’s always time for a reapplication – even at the top of Mt Coolum! 🙂

    Looking forward to your muffin top shedding recipes … I’ve just started back on regaining my wardrobe also. Odd photographs?? Whenever we attend a function that has disposable cameras on the tables I follow hubby into the urinal and take a ‘wee stream’ shot. It’s always good for a giggle both at the time… and for the lucky couple who develop them.

      Did you know that there’s an app for that now Chris? No more disposable cameras – you buy it and share with your wedding guests. All the pics end up in a gallery instantly – you can even share them on a screen at the reception.
      That’d make your photo a little less anonymous though, wouldn’t it?!? 🙂

      It was well worth having swollen knees today Lydia. The path is so well constructed too. It’s steep and rocky, but a lot of love has gone into making that track!

      They’re so easy Roxanne. Plus if you’re not too concerned about your carb intake, you could make them with plain flour instead of the besan.

    I can’t stop singing “Meatballs in the sky with diamonds” now…thankyouverymuch. Mt Coolum looks like an awesome place to go for a hike/walk! I can just picture the meatballs being carried along in your pocket (though I’m guessing that’s not where you kept them?! LOL). – Aroha #teamIBOT

    That view on the mountain top is spectacular…. and the non-food outlooks’ not too bad either. Australian’s should embrace Turkey more often! P.S.- Just watched your Brisbane’s Good Food and Wine festival video- Congrats! I usually go, although missed last year for some reason.

    Turkey is a bit of an understated meat to use isnt it, especially as it is lower in fat and healthier for us. These look delicious and I love the photo background, very special 🙂

    I definitely have to try these. I have not found meatballs that I could love. That sounds easy and tasty with curry, anything with Thai spice will give the meals a little kick!
