Ever have an idea that just won’t leave you alone?

Lamington ice-cream cake first tapped on my shoulder while I was putting together recipes for my cook book.

“Hi”, I said to the lamington ice-cream cake idea. “You’re a great idea. I should make you.”

Then I asked lamington ice-cream cake to sit quietly in the corner while I got really busy finishing the book “I’ll be back for you shortly”, I said.

Then the year barrelled on and I went on holidays.

When I got back I was stunned to find lamington ice-cream cake waiting patiently for me. “Yes, it’s your turn now”, I said to lamington ice-cream cake and low and behold, it was worth the wait.lamington ice-cream cake for Australia Day

Ingredients:

2L good quality vanilla ice-cream
100g dark chocolate
320g sweet condensed coconut milk
100g raspberry jam
fresh coconut to decorate

Method:

In a medium saucepan, melt together the chocolate and the condensed coconut milk until combined. Remove from heat and allow to cool.

Line a bar tin with cling wrap.

Spoon the ice-cream into a large bowl and combine the ice-cream and half the coconut-chocolate fudge sauce.

Working quickly, transfer half of the ice-cream into the prepared bar tin. Fold the edges of cling wrap over and lay another layer of clip wrap on top. Add the remaining ice-cream to the tin, cover and freeze overnight or until set. Reserve the remaining coconut-chocolate fudge sauce.lamington icecream cake step 2

Two hours before serving, turn the ice-cream layers out of the bar tin. Place the bottom layer on the serving plate and spread with the raspberry jam. Place the second ice-cream layer on the top to form a sandwich. Return to the freezer for thirty minutes.*

Remove the cake from the freezer and spread with the reserved coconut-chocolate fudge sauce. Return to the freezer to firm before serving. Top with fresh (or toasted) coconut and serve immediately.

* It’s pretty hot at the farm at the moment, so I found it necessary to return the cake to the freezer between steps. Those of you in cooler climates might be able to get away with
