we spent the day at home yesterday, readjusting to normal life. Spreading out after our week living in close quarters in the camper van. Unpacking, snoozing, preparing to return to reality today.
Every time we return home I count my blessings that we live a life that we’re happy to come home to. That we have safe comfortable beds and tank water that tastes better than anywhere else on earth.
Travel is wonderful, but there’s much to be said for routine. The kids are off to school today and I’m relishing being back in the kitchen, making healthy meals with the vegetables we’ve been craving while eating fried, salted meals prepared by people who only care if you live long enough to pay the bill.
Yesterday I made my favourite sandwich. It’s not fancy, but I’ve loved them since my first employer - a woman who ran a cafe where I washed dishes - first made me one back in 1995.
how to make the world’s best sandwich
ingredients:
- two slices of fresh bread
- salted butter
- 1 carrot, grated
- 4 slices tinned beetroot
- salt and pepper
method:
Spread lashings of salted butter onto two slices of bread. Add the grated carrot and top with beetroot slices. Season with salt and pepper, and serve with a good cup of tea. In my books, it's the best sandwich in the world!

Glad you had a lovely holiday. It is always nice to come home to your own bed though isn't it. I don't think you have me convinced to try that sandwich, ha ha ha, perhaps Mr Chardy might like it, he is totally into beetroot at the moment. xx

I've never had a carrot and beetroot sandwich (I don't like beetroot) but I reckon a grated cheese and carrot sandwich would be pretty great. I never think to put carrots in sandwiches!
