Yield 16 shorcakes
Strawberry shortcakes inspire memories of childhood. This easy recipe makes 16 mini strawberry shortcakes in just 25 minutes.
2 sheets shortcrust pastry
1 tbs cointreau (sometimes I use a blood orange liqueur and it's delicious)
3/4 cup thickened cream
1/4 cup strawberry jam
1 tbs icing sugar
Quarter the strawberries and combine them with the cointreau in a small bowl. Stir and allow to macerate.
Preheat the oven to 200°C.
Using a round cutter, cut 16 circles of pastry from each sheet. Place on prepared baking trays and bake for 10 minutes or until crisp, cool.
Beat the cream using an electric mixer.
Brush half the pastry rounds with strawberry jam and place them on a serving platter.
Top the rounds with cream then the macerated strawberries, then top with another pastry round.
Repeat with the remaining strawberries and cream, then dust with icing sugar.
