If you follow me on Facebook or instagram you would have caught my excitement when Oprah Winfrey liked one of my photos on Instagram. Some suggested that this might be the peak of my online existence and perhaps I should just retire while I was on top.

@oprah just liked my Instagram photo. O P R A H! Since we’re obviously buddies now, think I should invite her to the farm for afternoon tea before her Brisbane show? ?

I’m really bad at taking advice, so instead of retiring, I invited Oprah to afternoon tea at the farm while she’s nearby for her An Evening with Oprah tour.

Oprah landed in Brisbane overnight and while I’m yet to hear from her, I’ve stacked the fridge with all the trimmings needed to make this Christmas Antipasto Wreath at short notice.how to make a chrismtas antipasto wreath

Christmas Antipasto Wreath

Ingredients:

4 avocados
1 lemon
salt & pepper
1/2 tsp dried chilli flakes
4 slices proscuitto
handful each olives, semidried tomatoes, diced feta cheese
1 tbs capers
chives, finely chopped

Method:

Peel, stone and mash the avocados. Zest half the lemon, the juice the whole lemon. In a large bowl combine the avocados, lemon zest and lemon juice. Season with salt, pepper and chilli flakes.

On a flat platter, spoon the avocado mash into a circle. Decorate the circle with the olives, semidried tomatoes and feta. Slice the prosciutto into ribbons and arrange on the wreath. Scatter with capers and sprinkle with the finely chopped chives. Serve with lavosh and bread sticks.

So there you have it – a simple, stylish Christmas appetiser that’s fit for a queen (or an uber-celebrity).

If you bump into Oprah between now and Thursday, let her know the invite stands, otherwise I’ll see her at the show on Thursday night.

    I am so making this at Christmas – this is totally my kind of wreath. If Oprah came to my house, I’d just give her a plate of fudge. Sweet as.
