This is how dinner should be: fast, easy, and full of flavour! You can have this tasty meal on the table in just 30 minutes, or marinate the steak ahead of time with for extra flavour.
750g flank steak (sometimes called skirt steak), sliced into thin strips500g capsicums, sliced into strips (using red/green/yellow makes it beautiful!)1 large red onion, thinly sliced2 tbs extra virgin olive oil1 tbs ground cumin2 tsp chilli powder½ tsp cayenne pepper1 tsp chilli flakes½ cup fresh coriander leaves, roughly chopped
1 large lime, sliced
1 large avocado, diced Tortillas or large lettuce leaves
Method:
Preheat oven to 200°C and line a large baking tray with baking paper.
In a large mixing bowl, combine sliced flank steak, capsicums, red onion, olive oil, cumin, chilli powder, cayenne, and chilli flakes. Generously season with salt and pepper and mix until everything is well coated.
Spread the steak and capsicum mixture in a single layer onto the baking tray and roast for 15-20 minutes, or until the steak is cooked the way you like it and the capsicums are soft and slightly caramelized.
Remove the tray from the oven and sprinkle with fresh coriander and a squeeze of fresh lime juice. Serve immediately with diced avocado, tortillas (or lettuce wraps for a low-carb option).
